Le Glacier Bilboquet’s history began when founders Carole Lavallée and Yves Lebuis visited France in the early 80s. There they indulged in ice cream and sorbet like they had never tasted before ― rich with milk, cream and fruits. Delighted, they decided that Montrealers shouldn’t have to live without this kind of treat and set out to open Le Glacier Bilboquet’s Outremont location in 1983. An instant success, the business grew, attracting many a sweet tooth along the way and making a name for itself as one of the best places for a frozen treat in the city.
Twenty years after opening Carole and Yves decided to sell to someone better suited to keep the company growing. A client and fan since day one, Pierre Morin jumped at the opportunity, and purchased Bilboquet in 2004. Since he took over, he has put his passions for business and, of course, ice cream and sorbet, to work, making the brand one of the most appreciated by Montrealers on hot summer days.
“Prior to this, I worked in multinationals, large and medium-sized businesses. And there I was, owning a tiny company; I couldn’t be happier, and still am to this day,” says Pierre, smiling. "It’s the best type of store. Picture it; you’re selling happiness. How much better could it be?"

Bilboquet is famous for having some of the best ice cream in Montreal. It is amazing to see line ups outside of this location on most hot summer evening ( but WAY worth the 10 minute wait and just goes to show that Bilboquet is the place to be at!) They have a location on Sherbrooke in Westmount as well and a temporary location in the old port. If you have not tried it yet DO IT!
C'est tellement bon que l'on ne veut plus rien manger d'autre que celle du Bilboquet! L'attente pour se faire servir en vaut la chandelle!

Bilboquet is well known for their succulent, fresh and fruity sorbets and ice cream cakes. For a refreshing caffeinated treat, try their Bing Bang, which consists of a small scoop of the ice cream of your choice, in a cup of espresso. The melting ice cream adds a bit of sweetness to the espresso, as well as cools it off. It’s divine!
