It’s barely 6 pm and Rasa is already slammed. “Our customers are always such an eclectic mix of people,” says co-owner Adam Minster before turning to discuss the night’s cocktail options with a couple of older ladies who recently pulled up to the bar.

“We’re regulars,” explains one of the women. “This is our local, we come here a few times a week and we love it – the menu changes often, so we never get bored,” she says while tucking into the fish board. The board features a trio of fish prepared in different ways. Tonight’s triplet is a caprese albacore tuna with tomato confit and basil sauce, a jerked steelhead trout with apple relish and plantain chips, and the final pescatarian delight: smoked branzino with dill crème fraiche, orange caviar and mustard chips.
